Garam Masala
Ingredients:

1 1/2 Green Indori
Coriander Seeds
2.
275 grams Green Fennel
3.
125 grams Poppy Seeds
4.
125 grams Mustard Seeds
5. 50 grams Mesua ferrea
(NagKesar)
6. 125 grams Black Paper Powder
7.
250 grams Cumin Seeds
8.
15 grams Rock Asafetida
(Hing)
9.
125 grams Black Cumin (Shah Jeera)
10.
125 grams Black Cardamom
11.
10 grams Green Cardamom
12.
20 grams Cinnamon
13.
10 grams Star Anise
14.
10 grams Bay Leafs
15.
125 grams Mugwort (Mai
Patri)
16.
20 grams Mace (Javitri)
Method:
Dry roast the above first 8 ingredients very very well
Then roast the remaining ingredients lightly
Mix all the ingredients
Grind all ingredients to a fine powder
Store in an airtight jar
Should last for a year for a family of 4 or 5
