Coconut Prawns Pulav



Ingredients:
3cups Basmati Rice, washed and soaked for 15 minutes
500grams Jumbo Prawns, pilled and devein
2 Onions, finely sliced
1 Tomato, chopped
1 Potato, Chopped in small cubes
10 Garlic Cloves, chopped
2inch Ginger, chopped
5 Green Chilies cut in half
5tbsp Fresh Coriander, chopped
2 tbsp shahi Biryani Masala
6cups Fresh Coconut Milk
4tbsp Homemade Clarified Butter
4tbsp Oil
Salt to Taste

Method:
On a high flame in a handi heat up oil to that add the green chilies, sliced onions and cubed potatoes, stir till the onions are lightly darken,
Till then in a wet grinder add the garlic, ginger, chopped tomato and the fresh coriander and make a fine paste,
Add the Paste to the handi along with jumbo prawns and stir for 4 minutes,
Add the soaked rice and the shahi biryani masala mix slightly,
Know add the coconut milk and cover the handi and let it come to a boil and then simmer it till the rice is cooked,
When rice is cooked remove the handi from the gas stove,
Open the handi drizzle 4tbsp homemade clarified butter and cover the handi again for nice 15 minutes,
Know Serve hot with yograt, onion, tomato, mint and coriander raita and lime wedges.
