Quick Aloo Sabzi
Ingredients:
3 Big Potatoes
8/10 Garlic Cloves
8/10 Curry Leafs
1 1/2 tbsp Red Chili Powder
1/2 tsp each Mustard & Cumin Seeds
1/2 tsp Dry Mango Powder
1/4 tsp each Asafetida & Turmeric
3tbsp Oil (I used virgin olive oil)
Salt to taste
Fresh Coriander for Garnish
Method:
Wash the potatoes thoroughly, and cut it the skin on into
small flat pieces and keep it in some water,
Crush Garlic and keep it aside,
In a fry pan heat up 3tbsp oil to that add 1/2 tsp each Mustard
& Cumin Seeds and let them crackle,
Then add the 1/4 tsp each Asafetida & Turmeric and
also the 8/10 Curry Leafs and stir for 30 seconds,
Then remove the potatoes from the water and add it to the
fry pan and on high flame stir it for 2 minutes (keep in mind that you have
removed the potatoes from water while stir on high flame, flame from the fry
pan may scare you)
Know reduce the flame to low and cover the fry pan for 4 minutes
stir once in between,
Add the chili powder and the dry mango powder mix well
and again cover the fry pan for 2 minutes,
Remove it in a serving bowl, garnish with fresh coriander
and serve with Dal and Chapattis.
